Apricot Coconut Slice Recipe ~ Gluten, Dairy, Sugar Free

 
My 4 year old gets very fussy with "treats" that contain lots of nuts, seeds or raisins unless they contain a tonne of sugar that encourage the taste buds no matter how fussy the eater ~ which is something we try to avoid in our home...
So in an effort to avoid the sugar and bake him a nutritious treat he would actually eat ~ this is what i came up with!
This recipe is a wonderful quick and easy power source of nutrients, protein & essential fats & very "Paleo" & "Allergy" friendly

Ingredients
250 g Almond Meal (ground Almonds)
1 1/2 c of Dessicated coconut
4 Tbsp Ghee (Clarified Butter) or Coconut oil (tasteless is best for flavor purposes)
2 c Dried Apricots
1/2 cup xylatol (Natural Sweetener derived from Birch trees ~ low cal, low carb - avail from health foodies)
2 eggs


Method
Preheat Oven to 180 degrees
line a bake safe squarish with baking paper
Process the apricots in a food processor until crumbly
whisk eggs in a small bowl
mix dry ingredients together
mix apricots, dry ingredients & egg together well in a large bowl then pour into your prepared oven proof dish.
Bake for approx 20 min.
Allow to cool and set in fridge for at least 2 hours or over night for best texture and taste.

Variations
You can easily add nuts, dates or other dried fruits, or honey. Just as long as you keep to the basic ratios you should be fine.
