As our sense of smell is so closely related to the memory part of our brains and psychologically links us to previous experiences & states of mind it is hugely beneficial to use comforting aroma's to recconect us to a more postive & healthy mental state.
So transport yourself to that cozy, nurtured, positive feeling with my scrumptious & nutritious loaf recipe...
Banana Coconut Loaf:
Gluten, Dairy& Sugar Free...But surprisingly delish :)
2 ripe bananas mashed
2.5 Cups Almond Meal
.5 cup dessicated coconut
.5 cup L.S.A. mix (ground almonds, sunflower & linseeds)
.5 tsp baking powder
1tsp bicarb soda
.5 tsp salt
.5 cup Xylatol (natural sugar alternative - low carb - Candida Diet safe - sourced from all main healthfood stores)
1 Tbsp Vanilla Extract
3 lrg eggs
3/4 cup macadamia or grapeseed oil.
Method:
preheat oven to 180 or 170 for fanforced.
Mix Dry,
Mix Wet & mashed Bananas together
mix the lot together in a larg bowl
pour into a loaf tin lined with baking paper
Bake in oven for 35 - 40 min. Remove to cooling rack for 10 min, slice & Serve with your fave cupa
You could also include: Honey, Dates, walnuts or saltana's and if you are not worried about dairy you could ice it with a honey cream cheese ~ or bake as muffins but only cook for aprox 20 min.
This loaf is even better the next day as it moistens more and the flavours become stronger!
